How to make Streusel Topping:
- Make the streusel toppingfirst and refrigerate– Combine melted butter, flour & sugar together, until crumbly mixture forms, then refrigerate.
How to make the Apple Coffee Cake
- Butter and flour the inside of a 9×12 baking dish. Preheat oven to 350F.
- Prep the apples.
- Whip butter and sugar together.
- Meanwhile combine the wet ingredients
- Whisk the dry ingredients:In a separate bowl sift the salt, baking powder and flour together.
- Add the wet and dry ingredients into the whipped butter by alternating them in thirds. Do not overmix or the cake will be tough.
- Fold in diced apples.
- Transfer the apple cake batter into baking dish into an even layer. Top with the streusel topping by breaking it into smaller pieces with your hands.
- Bake at 350F for 45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing and serving.

Ingredients
Streusel Topping
- 1/2cupgranulated sugar(or brown sugar)
- 1/3cupall-purpose flour

Apple Cake Ingredients
- 1/2cup1 stick unsalted butter, softened or melted
- 1cupgranulated sugar(or brown sugar)
- 2Cupsall-purpose flour (Canadian flour is best)
- 1 1/2tspbaking powder or 1 tsp baking soda
- 1/2tspkosher salt
- 2large eggs, room temperature
- 2teaspoonvanilla extract
- 1/2cupbuttermilk(*see footnotes)
- 3-6large applespeeled, cut into 1/2 inch cubes

How to make Apple Coffee Cake Recipe with a Streusel Topping:
Make the streusel topping first – Combine 4 tbsp melted butter, 1/3 cups flour & 1/2 cup sugar together, until crumbly mixture forms. Refrigerate until ready to use.
How to make the Apple Coffee Cake
Butter the inside of a 9"x12" baking dish with 2 tbsp butter. Now add 1 tbsp of flour and shake the dish around covering the inside with flour. Alternatively, you can spray the inside with a nonstick spray. Set aside.
Preheat oven to 350F with the baking rack in the middle.
Prepare the apples: Peel, core, and dice 3-6 apples into 1/2 inch cubes, then add 3 tbsp of flour and toss together to coat the apples lightly.
Whip 1/2 cup softened butter with 1 cup of sugar for about 2-3 minutes.
Meanwhile, combine the wet ingredients: In a cup whisk 1/2 cup buttermilk, 2 room temperature eggs and 2 tsp of the vanilla extract. Set aside.
Combine the dry ingredients: In a bowl sift or whisk together 1/2 teaspoon salt, 1 1/2 teaspoon baking powder and 2 cups all-purpose flour.
Combine into the batter: Alternate adding the dry and wet ingredients into the whipped butter, by adding them in thirds. Do not overmix or the cake will be tough.
Next, fold the apples into the batter.Transfer the apple cake batter into the prepared baking dish and spread into an even layer. Sprinkle the top with the streusel topping by breaking it into smaller pieces with your hands.
Bake at 350F for 45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing and serving.

Hello! I firstly wanted to thank you for this fantastic recipe, i have baked this cake dozens of times with berries, apples, pears and i think i tried peach although it came out a little moist. I made this and it is good. I thought just too many steps that were not necessary. Melted butter for pan needs only to be soft butter. Melted did not work for me. Also mine did not look at all like your pictures. The topping has to be reworked.

Thank you for this yummy recipe! Do you think this would work if baked in a 9×5 pan for 60mins? for more of a “bread/cake”?

I find that it bakes better in a wider pan. When baked in a smaller pan, the cake is of course taller, but it looses it’s moistness and takes forever to bake. So if you want to bake it in a smaller pan, half the recipe and bake it in a 9×5 pan 🙂

In the ingredients you have:
1 1/2 tsp baking powder or 1 tsp baking soda but in step 3 you have: Combine 1/2 teaspoon salt, 1 1/2 teaspoon baking soda and 2 cups all purpose flour together, then whisk together with fork or whisk.
