Ingredients

Turkey sausage - Great for cutting down on fat content and grease.

Red bell pepper - You can use any color or type of bell pepper for this recipe. I used a combination of yellow bell peppers and red bell peppers.

Onion - I like to use a sweet onion to really enhance the flavoring.

Egg whites - Great for adding protein.

Cream cheese - This helps to make the casserole rich and creamy without the worry of it being dry.

Salt - Salt will naturally enhance all the other flavors.

Onion powder - For a boost of onion flavor and taste.

Garlic powder - We love the flavor of garlic and use it a lot. You can adjust or omit based on your preference.

Black pepper - Pepper is also a natural flavor enhancer.

Shredded cheese - Use your favorite type of cheese.

How To Make This Egg White Breakfast Casserole Recipe

Step One: Preheat the oven to 350 degrees. Spray a 9X14 basking dish with nonstick cooking spray.

Step Two: Add the peppers, turkey sausage, and onions to the bottom of the casserole dish.

Step Three: Put the dish in the oven and bake for 20 minutes. Mix. You want to be sure that the meat is browned and the veggies are soft. Add cheese on top.

Step Four: Add the egg whites, cream cheese, and seasonings to a blender and blend until it is smooth.

Expert Tip - Alternatively, you can mix them in a large bowl with an electric mixer. It is hard to thoroughly incorporate the cream cheese by hand so I recommend using some type of electric blender or mixer.

Step Five: Pour the egg mixture over the top of the fillings in the dish.

Step Six: Put the mixture in the oven and bake for 30 minutes or until the egg bake isn’t jiggly. The edges should also be golden brown.

Variations

Use a different type of meat - I love the flavor that this sausage egg casserole has, but that doesn't mean you can't change it up. Adding Canadian bacon, ham, or even chicken sausage are all other delicious options for this great recipe.

Add hash browns - Even though this addition will take it out of the low carb category, it's a great way to make this hearty and delicious. You could also add sweet potatoes for a pop of sweetness.

Change the type of cheese - Pepper jack cheese is perfect for this recipe if you like a little bit of spice!

Whole eggs - If you want to use whole eggs instead of all or some of the whites you can. You would use 8 whole eggs to replace 12 egg whites.

You can actually turn this recipe into egg muffins if you want by using a muffin pan. Just make the recipe per the recipe card instructions, and instead of adding to a baking dish, add to individually lined muffin cups. Bake - and enjoy. Nothing like a Christmas morning breakfast that people can grab and eat while they're opening gifts.

Ingredients

  • 1 lb turkey sausage
  • 1 red bell pepper sliced
  • 1 onion slices
  • 12 egg whites (12 oz or 1.5 cups)
  • 4 oz cream cheese
  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 cup shredded cheese (cheddar, mozzarella, feta, etc.)

Instructions

  • Preheat oven to 350. Spray a 9x13 baking dish with cooking spray.

  • Put the turkey sausage, peppers, and onions in the bottom of the casserole dish.

  • Bake for 20 minutes, mixing halfway through, or until the meat is browned and the veggies are softened.

  • Put the egg whites, cream cheese, and seasonings in a blender and blend until smooth.

  • Pour the egg over the fillings. Top with cheese.

To Reheat: Place on a microwave-safe dish and cover with a paper towel. Put in the microwave and heat for 1-2 minutes or until it's hot all the way through. You can reheat larger quantities in the oven. Just bake at 350 for 10-15 minutes or until hot.

To Freeze: Cover in foil or plastic wrap, then put in an airtight container. Keep frozen for up to two months—Thaw before reheating and serving.
