Ingredients

  • ingredients:
    for the base:
    1/2 cup oat flour
    1/8 cup runny peanut butter
    1/8 cup maple syrup
    1 tbsp almond milk
    1 tsp vanilla extract

    for the filling:
    1/2 cup runny peanut butter
    1 tbsp coconut oil
    1 tbsp maple syrup
    1/2 cup peanuts

    for the chocolate coating:
    3/4 cup chocolate chips
    1 tbsp coconut oil

Directions

  • start by making the base. in a mixing bowl, combine the oat flour, runny peanut butter, maple syrup, almond milk, and vanilla extract. mix everything until it forms a dough-like consistency.
  • once the base is ready, press it into silicone ice cube molds, ensuring it’s evenly spread and compacted. place it in the freezer while you prepare the filling.
  • for the filling, mix the runny peanut butter, coconut oil, and maple syrup together. stir until the mixture is smooth and well combined.
  • pour the peanut butter mixture over the peanuts, covering them completely.
    place the silicone ice cube mold in the freezer and let it set for at least 30 minutes.
  • then, add the melted chocolate chips on top and place back in the freezer for a few hours to set.
  • once the filling has set, carefully pop the bites out of the silicone mold. you should have 9 delicious bites!
  • store in the freezer in an airtight container and thaw a bit before eating!

  6. Can I sub another milk for almond milk? I have both cashew milk and coconut milk on hand. Will either of those work? Or do you have a suggestion for a “clean” almond milk? Most are a bunch of unnecessary ingredients. Thank you!
