These whimsical mini cakes are made with tomato soup, which may sound a little weird to you, but truly makes for one of the moistest cake recipes out there. Cute and delicious, the Spiced Tomato Soup Cancakes are then topped with an orange icing that brings it all together. Great to bring to parties or just to serve to your family so everyone has their individual mini cake, these are incredibly delicious.

Ingredients
- Vegetable cooking spray
- 2 cups all-purpose flour
- 1 1/3 cup sugar
- 2 teaspoons baking powder
- 1 1/2 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 1 can (10.75-ounces) Campbell's® Condensed Tomato Soup
- 1/2 cup vegetable shortening
- 2 eggs
- 1/4 cup water
- For the Orange Icing:
- 1 cup confectioners' sugar
- 2 tablespoons orange juice
- 1 teaspoon grated orange grind
Instructions

Preheat the oven to 350 degrees F. Spray 7 empty Campbell's (10 3/4 ounces) soup cans with the cooking spray.

Stir the flour, sugar, baking powder, allspice, cinnamon, baking soda and cloves in a medium bowl.

Add the soup, shortening, eggs and water. Beat until mixed, using an electric mixer at low speed. Spoon into the prepared cans and place them on a baking sheet.

Bake for 30 minutes or until a toothpick inserted in the center of a cake comes out clean. Cool in the cans on wire racks. Remove the cakes from the cans.

Drizzle the tops and sides of the cakes with Orange Icing. Top with orange zest, chopped nuts or red candied cherries cut in "leaves".

Mix everything in a small bowl until it's smooth.

This is the most unique recipe I have ever seen! I'm agreeing with the comments and thinking that is more of a dessert than anything else. I am so curious about the flavors and when would be an appropriate season to serve this cake. Perhaps, winter because of the soup or spring because of the tomato flavor? Any suggestions?

I don't know. Based on the other comments, it is worth a try. The tomato soup is unconventional. Does the tomato soup add any sweetness. From the other spices it seems like it would be sweet, but there is no sugar except for in the glaze. Caramel icing sounds like it would be good.

My mother used to make this and I have made it. We did not use the cans, just regular pans. The cake is very moist and you cannot tell that it has tomato soup in it. I think we used caramel icing.

One of the easiest and best pumpkin bread recipes I ever got is:1 cake mix (carrot, butter pecan or caramel are my faves)1 can solid pumpkinMix together, stirring well, and bake as usual. I make loaf bread, and muffins. All come out amazingly moist and delish!

It's creative, but not sure why Recipe Lion calls it an appetizer, and the fact it takes soup is why I'm not sure if it is an appetizer or a dessert. I wish someone would tell me, for certain which it is! I'd like to make it, and I'd like to be able to tell friends and family, which one it is.

Creative! But my first thought or reaction is, "is this an appetizer or a dessert?". The fact it takes soup is why I'm uncertain.

I have no idea why RL calls it an appetizer. That is probably a mistake. I am going to go out on a limb here and venture to call it a dessert since it is cake and it has loads of sugar in both the batter and the icing. I dont think it matters that it has tomatoe soup in it. Guess it all depends on whether you want to call a tomatoe a veggie or a fruit?
