Ingredients

  • 1 chicken breast, split, skinned, boned
  • 2-1/2 cups pineapple, chunked
  • 2 large cloves garlic, pressed
  • 2 tablespoons minced ginger root
  • 2 tablespoons vegetable oil
  • 2 medium carrots, sliced
  • 1 green bell pepper, slivered
  • 4 ounces thin spaghetti noodles, cooked
  • 3 green onions, chunked
  • 1/3 cup reserved pineapple juice
  • 1/3 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil

Instructions

  1. Drain 20-ounce can (2-1/2 cups) of pineapple, reserving 1/3 cup juice for sauce.
  2. Cut chicken into chunks.
  3. In large skillet, stir fry chicken with garlic and ginger in oil for 2 minutes.
  4. Add pineapple, carrots and bell pepper.
  5. Cover; Steam 2-3 minutes until vegetables are tender-crisp.
  6. Stir in spaghetti.
  7. Combine sauce ingredients.
  8. Pour into skillet along with green onions.
  9. Toss until ingredients are mixed and heated through.
